CRACKED WHEAT OATMEAL BREAD 
1 1/4 tbsp. yeast
1/2 c. warm water
1 c. lowfat milk or soy milk
1 c. boiling water
1/4 c. sugar
2 tsp. salt
1/2 c. cracked wheat soaked in 3/4 c. boiling water
3/4 c. oatmeal
2 1/2 c. white flour
2 1/2 to 3 1/2 c. whole wheat flour

Soak cracked wheat and let cool. Mix boiling water, milk, salt, and sugar; let cool to lukewarm. Meanwhile, mix yeast in warm water and let stand until foamy. Add to milk mixture. Add cooled cracked wheat and oatmeal and mix well. Gradually add flours and mix until you have a stiff, barely sticky dough. Turn out onto floured board and knead 5 to 8 minutes. Let rise in oiled bowl until double in size (about 1 1/2 hours). punch down and let rise again until double (another hour). Shape into loaves and put in greased loaf pans. Let rise again until doubled (45 minutes). Bake at 400 degrees approximately 40 minutes. Remove from pans immediately and cool on wire racks. Makes two loaves.
