SAVANNAH RED RICE | |
4 strips bacon 2 green bell peppers, chopped 2 med. onions, chopped 2 c. cooked rice 1 (16 oz.) can stewed tomatoes 1 c. tomato sauce 1 tsp. Tabasco sauce 1 lb. cooked shrimp and/or cooked sausage Pepper to taste 1 tbsp. Parmesan cheese In large skillet, fry bacon crisp and remove to paper towel. Save drippings in skillet. Brown peppers and onions in drippings. Add rice, tomatoes, tomato sauce, Tabasco and crumbled bacon. Add cooked shrimp or sausage and pepper to taste. Preheat oven to 325 degrees. Pour all into greased 2 quart casserole. Sprinkle top with Parmesan cheese. Bake 30 minutes. |
