BROCCOLI SALAD | |
8 slices Bacon plus add'l slices for garnish if desired 1 Medium bunch Broccoli 1/2 Small Red Onion 1/2 cup Finely Chopped Celery 1/2 cup Raisins 1 cup Mayonnaise 1/4 cup Sugar 3 tbsp. Red Wine Vinegar Cook bacon until crisp; drain and crumble into small pieces. Using only the flowerette and most tender stem sections of the broccoli, chop into very tiny pieces. Peel the red onion and finely chop. In a bowl, combine broccoli, onion, celery and raisins. In a smaller bowl, mix remaining ingredients. Pour this dressing over salad and toss. Cover and refrigerate at least 1 hour. Garnish with add'l bacon pieces if desired. Serves 6-8. |
