THUNDERBOLT CAKE (SAUERKRAUT) 
2/3 c. butter
1 1/2 c. sugar
1 tsp. vanilla
3 eggs
1/2 c. unsweetened cocoa
2 1/4 c. flour
1 tsp. baking powder
1 tsp. baking soda
1/4 tsp. salt
1 c. water
2/3 c. chopped sauerkraut, rinsed & drained

Cream butter and sugar. Beat in eggs and vanilla. Sift cocoa, flour, baking powder, baking soda and salt. Add alternately with water. Stir rinsed and drained sauerkraut into mixture. Grease and flour 2 (8-inch) square or round pans. Bake at 350 degrees for 30 minutes.
