PUMPKIN CAKE 
5 c. flour
3 tsp. baking soda
2 tsp. salt
2 tsp. cinnamon
2 tsp. nutmeg
1/4 tsp. ginger
1 1/2 c. Mazola
4 c. sugar
6 extra lg. eggs
1 lg. can solid pack pumpkin
1 oz. rum extract
1 tsp. vanilla extract
1 pkg. natural raisins
2 c. walnuts

Sift together first six ingredients and set aside. Beat Mazola and sugar until light and creamy. Beat eggs and add to sugar and oil mixture. Add flour mixture alternately with pumpkin to sugar and oil mixture. Fold in extracts, raisins and walnuts. Divide into five 8 x 4 x 2 1/2 inch greased and floured pans. Bake at 350 degrees for 1 hour and 15 minutes or until done.
