Yeah great recipe and the maple syrup is an excellent add in.

The syrup is just used to sweeten and thicken the sauce. A better alternative I have found is using honey. It gives it a richer, subtle flavor.

Hot wing sauce was great but it could be better with lemon juice.

This recipe rocks. I use this to coat deep fried wings, and as a sauce for any meat which needs spicing up. I have used different hot sauces and they all seem to work well, and with this you can change how spicy the sauce is. No matter which hot sauce you choose, the maple syrup gives it a hint of sweetness which is tasty!
