VELVET SCALLOPED POTATOES 
4 tbsp. butter, melted
1/3 c. flour
4 c. milk
1/4 loaf Velveeta cheese
4-6 potatoes, peeled and sliced
1 onion, finely diced
Salt and pepper to taste

In large saucepan, melt butter and add flour, stirring constantly. Gradually add milk, then cheese, salt and pepper. Set aside.

Lightly grease a casserole dish. Layer sliced potatoes, onions and sauce. Bake at 350 degrees for 45 minutes to 1 hour. Place a heavy cookie sheet under casserole dish to keep bottom from burning.

NOTE: Recipe may be doubled or tripled, cooking longer (2 to 2 1/2 hours).
