VEAL PARMESAN 
1 lb. thin veal
Salt & pepper
1 egg
1/3 c. grated Parmesan
1/3 c. bread crumbs
1/4 c. oil
1 onion, chopped
1 can tomato paste
2 c. hot water
1/2 tsp. marjoram
1/2 lb. mozzarella cheese
2 tbsp. butter

Sprinkle veal with salt and pepper. Beat egg with 2 teaspoons water. Dip veal in egg then mixture of crumbs and grated Parmesan. Fry veal in hot oil until golden. Remove to baking dish (or pan). In same frying pan, saute onion in melted butter. Add paste, hot water and marjoram. Simmer and stir a few minutes.

(For more sauce a can of tomato sauce can be added if desired.) Lay pieces (or slices) of mozzarella on veal. Pour sauce over all. Bake 20-30 minutes in 350 degree oven. This is one of my favorite recipes. Serves 4.
