1 1/2 c. bulgur wheat, raw (soak in warm water and drain) 2 bunches fresh parsley, minced (no stems) - use blender, but do not over mince, should have some leafy body 3/4 c. fresh mint leaves, minced 2 bunches green onions, chopped thin (do not use blender) 3 med. tomatoes, chopped 1/4 inch cubes 1 can garbanzo beans, drained; optional 1/4 c. or more olive oil 1/2 c. or more lemon juice 1-2 tsp. salt Ground pepper, to taste 1-2 crushed garlic to taste Combine all of the above ingredients and chill for at least 1 hour. Now enjoy a Middle East sandwich by filling a pita bread pocket. This recipe is adapted from a traditional Lebanese dish served for festive occasions. |
