2 c. chopped beets
2 c. chopped tart apples
1/4 c. thinly sliced onions
1 1/2 tsp. salt
2-3 tbsp. butter
A generous grating of nutmeg

If apples are too tart, add 1 tablespoon sugar and if they are not tart, add 2 tablespoons lemon juice.

Mix first 4 ingredients together in a greased casserole dish. Dot with 2 to 3 tablespoons butter, sprinkle with nutmeg, cover and bake at 325 degrees for 1 hour.
