HOLIDAY SWEET POTATOES | |
2 (15 oz.) cans mashed sweet potatoes (4-5 c. fresh) 1 1/4 c. XXXX powdered sugar 2 eggs 1 c. evaporated milk (3/4 c., if canned) 1/2 tsp. ground nutmeg 1/2 tsp. ground cinnamon Bake 20-25 minutes at 400 degrees in a 7 1/2 x 12 inch pan. TOPPING: 3/4 c. slightly crushed cornflakes 1/2 c. chopped pecans 1/2 c. brown sugar Mix together. Sprinkle over baked potatoes. Dribble 3/4 stick melted butter over topping. Bake 10-15 minutes more. |
