HOLIDAY SWEET POTATOES | |
1/2 c. butter 6 sweet potatoes, cooked and mashed 1 tsp. baking powder 1 tsp. vanilla 2 tsp. ground cinnamon 2 eggs 3/4 c. sugar 3/4 c. buttermilk 3/4 c. pecans, chopped (optional) Add butter to hot potatoes, combine with first 6 ingredients with mixer. Stir in pecans if desired. Place mixture in greased 2 quart casserole and bake at 350 degrees for 30 minutes. Top with marshmallows during the last 10 minutes of cooking. Serves 10 to 12. |
