3 very ripe bananas 1/3 c. applesauce 1 c. raisins 2 c. oatmeal 1 tsp vanilla Recipe was tested with quick-cooking oatmeal and chunky as well as regular applesauce. Do not over bake cookies, or raisins will burn. Check for doneness after 15 minutes. Grease 2 cookie sheets; set aside. In large bowl, mash bananas. Add all the remaining ingredients and mix well with a spoon or spatula until combined. (Mixture will be very heavy yet moist.) Drop by rounded teaspoonfuls onto prepared pans, spacing them about 2 inches apart. (Cookies do not rise or spread during baking.) Bake in a 350 degree oven for 15 to 20 minutes or until nicely browned and firm to the touch. Remove from oven. Transfer cookies to wire cake rack to cool. Store cooled cookies in a zipper-lock plastic bag. Serve while still warm for a special treat or take along on picnics, hikes or for between-meal snacks for kids or adults. Makes about 2 dozen cookies. |
