SAUSAGE AND TASSO RED GRAVY 
1 lb. sausage
1 lb. tasso
1 can Rotel tomatoes
1 lg. onion
2 clove garlic
1 lg. bell pepper

Fry sausage and tasso until brown. Drain fat, add onions and garlic and saute until wilted.

Add can Rotel, chopped bell pepper and 3 cups water. Boil then simmer for 1 hour. You may have to add more water. Serve over hot rice.

This is great. I like it so much I make it a couple times a month. I found that if you want a little thicker sauce add about a half cup of corn starch dissolved in water.
