SHRIMP FRIED RICE 
4 c. cold cooked rice
2 eggs, beaten
3 tbsp. oil
1 c. sm. shrimp
1 bunch green onions, thinly sliced
4 tbsp. soy sauce
1 tsp. sugar
3/4 c. carrots, shredded

Heat 1 tablespoon oil in wok, cook eggs until firm, chop. Add rest of oil to wok, cook shrimp. Add rice, heat through. Mix soy and sugar. Add to rice. Add carrots, onion and eggs, stirring to mix. Cook 5 minutes, stirring constantly.
