FRIED RICE & SHRIMP 
1/2 c. minced onion
1/4 c. minced green pepper
4 tbsp. salad oil
2 lbs. cooked shrimp, cut into pieces
4 c. cold cooked rice
1 can (4 oz.) sliced mushrooms, drained
4 tbsp. soy sauce
2 eggs, beaten

In large heavy skillet, cook onion and green pepper in oil for 3 minutes. Add shrimp, rice, drained mushrooms and soy sauce. Cook slowly, stirring frequently for 10 minutes or until heated. Add eggs, cook 1 or 2 minutes longer, stirring constantly.

Can substitute 2 cups cooked chicken or pork. Serve with egg drop soup and fried won tons or egg rolls. Serves 10.
