SHRIMP FRIED RICE 
1 1/2 c. water
1 1/2 c. minute rice
2 beaten eggs
3 tbsp. butter
1/3 c. chopped green onions
3 tbsp. soy sauce
1 can drained sm. shrimp

Bring 1 cup of the water to a boil in a saucepan. Stir in rice. Remove from heat. Cover and let stand 5 minutes. Meanwhile, cook eggs in butter in 10 inch skillet until set. Add onion and the rice and cook and stir over medium heat until rice and onion are lightly browned, about 5 minutes. Combine remaining water, shrimp, and the soy sauce. Stir into rice.
