VEGETABLE CURRY 
2 tbsp. oil
1/4 tsp. mustard seeds
2 tbsp. Urad Dhal
1 lg. onion, minced
1 lb. vegetables (cauliflower, carrots, beans, peas, broccoli), minced
1 lg. tomato, minced
1 tsp. curry powder
1/2 tsp. turmeric powder
2 c. water
1 tsp. salt
1/2 tsp. garlic powder

Heat oil in a frying pan and allow to boil. Add mustard seeds and urad dhal and allow seed to crackle. Add onions and fry until brown.

Add vegetables and tomato and saute 5 minutes.

Add curry, turmeric, salt and water. Cook 15 minutes until vegetables are tender. Add garlic and remove from heat. Serve hot with rice or chappati.
