WAYNE'S MINESTRONE SOUP | |
1 1/2 lb. Italian mild sausage (cut in 1/2 inch pieces) 1 1/2 lb. Italian hot spicy sausage 5 cooked hamburger patties (cut in 1/2 inch cubes) 3 tablespoons olive oil 10 cups water 1 liter beef stock 1 680 ml tomato sauce 1 13 oz. tomato paste 38 oz. red kidney beans 2 cans 10 oz. mushrooms (sliced) 1 can 12 oz. Niblet corn 1 large zucchini (diced 1/2 inch pieces peel on) 2 large carrots (sliced 1/4 inch) 1/2 head green cabbage (shredded) 2 tbsp fresh garlic or powder (or to taste) 1/4 tsp pepper 4 tsp salt 2 tablespoons fresh sweet basil, minced 2 1/2 cups fusilli pasta (optional pasta of choice) grated Parmesan cheese Brown sausage in oil. After browning sausage add remaining ingredients and slow cook for 1 1/2 hours until pasta is tender. This recipes makes 16 liters. Wayne's soup feeds our son's offensive lineman following a game with great compliments and requests for more!! You can downsize the recipe if you're not feeding a gang either way you'll love it.
