PUMPKIN COOKIES 
Cream:

3 c. sugar
1 1/2 c. oil
2 eggs
3 c pumpkin

Sift:

3 1/2 c. bread flour
3 tsp. baking soda
3 tsp. baking powder
2 tsp. salt
1 tsp. nutmeg
3 tsp. cinnamon
1/2 tsp. ginger

Add to creamed mixture 1 cup at a time mixing well. Drop on cookie sheet. Bake at 400 degrees.
