ENGLISH TOFFEE COOKIES | |
1 c. butter 1 c. sugar 1 egg, separated 2 c. flour 1 tsp. cinnamon 1 c. chopped walnuts or pecans Cream the butter and sugar together until smooth. Add the egg yolk and mix in thoroughly. Sift the flour, measure and stir again with the cinnamon. Add the flour to the creamed mixture, using your hands to blend thoroughly. (Isn't necessary to use mixer.) Spread in an even layer over the entire surface of a greased cookie sheet (10"x15") or any size. Work with palms to smooth surface. Beat egg white slightly, spread to completely cover. Sprinkle the chopped nuts over all, pressing them into dough. Bake at 275 degrees for 1 hour. Cut in 1 1/2" squares while still warm. Cool, makes 6 dozen 1 1/2" squares. |
