ENGLISH TOFFEE COOKIES 
1 c. butter
1 c. sugar
1 egg, separated
2 c. flour
1 tsp. cinnamon
1 c. finely chopped pecans or sesame seeds

Cream butter until smooth. Add egg yolk. Add flour and cinnamon to mixture, using hands to blend thoroughly. Spread in an even layer over entire surface of a 10 x 15 inch greased cookie sheet. Work with palms to smooth the surface. Beat egg whites slightly. Spread to cover cookies. Sprinkle nuts over all. Bake at 275 degrees for 1 hour. Cut while hot. Makes 6 dozen.
