QUICK AND EASY LEMON MERINGUE
PIE
 
1 (9") graham cracker pie crust
3 eggs, separated
1 (14 oz.) can sweetened condensed milk
1/2 c. lemon juice
Few drops yellow food coloring (opt.)
1/4 tsp. cream of tartar
6 tbsp. sugar
1 tsp. vanilla

Preheat oven to 350 degrees. In a mixing bowl, beat egg yolks. Add sweetened condensed milk, lemon juice and coloring (optional). Pour into crust. In mixer bowl beat egg whites with cream of tartar to form soft peaks. Gradually add sugar beating until stiff. Mix in vanilla. Spread meringue on top of pie sealing to edge. Bake until golden brown, about 10 minutes. Cool. Chill.
