GERMAN APPLE CAKE 
1 c. salad oil
3 eggs
2 c. sugar
1 tsp. baking soda
2 tsp. cinnamon
1 tsp. vanilla
2 c. flour
1/2 tsp. salt
4 c. peeled & diced apples

Beat eggs and salad oil until fluffy. Add sugar and soda until blended; add cinnamon, flour and salt until blended. Add vanilla. Fold in apples (and nuts if desired). Bake in greased and floured 9 x 13 inch pan. Bake in 350 degree oven for 45-50 minutes.

ICING (Optional) :
1 (3 oz.) pkg. cream cheese
1 tsp. vanilla
1 1/2 tbsp. butter
3/4 c. confectioners' sugar

Blend and put on a warm cake.
