SQUASH CASSEROLE 
3-4 yellow squash
1/2 c. grated cheese
1/2 c. chopped pecans
Butter
6-8 saltines, crushed
Salt & pepper to taste
1 can mushroom soup

Season squash with salt, pepper and butter. Place layer of squash in greased baking dish; add layer of cheese, soup and pecans, repeat layers. Cover with crushed crackers. Dot with butter. Bake at 350 degrees for about 40 minutes. Serve hot. Bits of left over ham, bacon or chicken may be chopped and added before baking.
