7 lbs. peaches, peeled
3 lbs. sugar
3 pts. good apple vinegar
1 tbsp. stick cinnamon
1 tsp. each cloves & mace

Boil vinegar, spices and sugar to a rolling boil. Add peaches. Cook until can be pierced with a straw. Put peaches in jars. Bring syrup to boil for long enough to thicken very little. Pour over fruit and seal.
