JOAN ARNOLD'S PORK CHOPS 
6 pork chops
4-5 potatoes, cut up
5-6 carrots, cut the long way
2-3 peppers, cut
2 onions, cut
1/4 c. oil

Put pork chops, carrots, potatoes, peppers, onions, in baking pan; pork chops on bottom, vegetables on top. Sprinkle garlic, pepper over dish. Pour oil over dish. Bake at 350 degrees for approximately 2 hours. (Potatoes and carrots will be golden).
