SHANE'S FLAMING MANGO BBQ SAUCE | |
I usually make my sauces from scratch but I needed something quick so I whipped this up with the ketchup and mustard and I was thoroughly impressed! If you like it a little less spicy you can reduce the habaneros to 2 or even 1, however you are really going to want that flavor. I have found that if you roast the chilies in a pan until they are lightly charred it tends to cook some of the heat out. 2 cups ketchup (Hunts) 1 cup pineapple mango juice 1 tbsp. creole mustard (or Dijon mustard) 1 tsp. liquid smoke 3 finely minced Habanero peppers 1/2 medium onion, finely minced 2 cloves garlic, finely minced 1/2 cup light brown sugar 1 tsp. salt 1/4 tsp. black pepper In a medium saucepan combine all ingredients. Bring to 145°F using thermometer. Reduce heat and cover, stirring occasionally until the onions and habaneros are extremely soft. This should not take long if they are minced fine enough. Enjoy!
