GOURMET POTATOES 
6 med. potatoes
2 c. Cheddar cheese, shredded
4 tbsp. butter
1/2 c. green onion, chopped
1 1/2 c. sour cream, at room temperature
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes in skins. Cool, peel and shred coarsely. Over low heat, combine cheese and 1/4 cup butter. Stir until cheese is melted. Remove from heat and blend in onion, sour cream, salt and pepper. Fold in potatoes and place in greased 2 quart casserole dish. Dot with 2 tablespoons butter. Cover and bake for 25 minutes in 350 degree oven.
