GOURMET POTATOES 
6 med. potatoes
2 c. shredded Cheddar cheese
1/4 c. butter
1 1/2 c. sour cream (room temperature)
1/3 c. chopped green onions
1 tsp. salt
1/4 tsp. pepper
2 tbsp. butter

Cook potatoes in skins; cool, peel and cube. Fold in all ingredients, except the 2 tablespoons butter, with the potatoes and turn into a greased 2 quart casserole. Dot with butter. Bake at 350 degrees in oven for 25 minutes or until heated through. Serves 8-10.
