GOURMET CHEESE POTATOES 
6 med. potatoes
2 c. shredded cheddar cheese
1/4 c. butter
1 1/2 c. sour cream or sour milk
1/3 c. onion, chopped
1 tsp. salt
1/4 tsp. pepper
Paprika

Cook potatoes in skins. Shred coarsely. In saucepan over low heat, combine cheese and butter. Stir until melted. Remove from heat and add sour cream, onion, salt and pepper. Fold sauce and potatoes together. Pour into greased casserole. Sprinkle with paprika. Bake at 350 degrees for 30 minutes or until bubbly throughout.
