POTATO GOURMET 
6 med. potatoes
1/4 c. melted butter
1 c. sour cream
2 tbsp. butter
3 chopped green onions
1 tsp. salt
1/4 tsp. pepper
2 c. shredded Cheddar cheese

Wash potatoes, cover with salted water, cook about 25-30 minutes until tender. Peel and coarsely shred, set aside.

Combine 1/4 cup butter and cheese in saucepan and stir until partially melted.

Combine potatoes, cheese mixture, sour cream, onions, salt and pepper; stir well. Spoon mixture into a greased 2-quart shallow casserole, dot with 2 tablespoons butter. Cover and bake at 300 degrees for 25 minutes.
