BLUEBERRY MUFFINS 
2 cups all-purpose flour
4 tsp. baking powder
1 tsp. salt
1/8 tsp. cinnamon
1/2 cup sugar
1 cup frozen or fresh blueberries
2 eggs
1/2 cup (1 stick) butter, melted
1 cup milk

Preheat oven to 400°F. Place paper cups in ungreased tins.

Sift dry ingredients together. Add blueberries to dry mix and mix unit well coated.

In small bowl, beat eggs, then add melted butter and milk. Quickly stir liquid mixture into dry mix. Do not over-mix. Fill muffins cups 3/4 full.

Bake at 400°F for 20 minutes until lightly browned.

Makes 12 to 15 muffins.
