POTATOES GOURMET 
6 med. Irish potatoes
1 med. onion, chopped
4 tbsp. butter
1 1/2 c. sour cream
2 c. Cheddar cheese, shredded
3/4 tsp. salt

Cook peeled potatoes until done. Drain. Mash with a potato masher or a fork. Melt butter in a pan and saute onion about 5 minutes. Stir sauteed onions and butter, sour cream, cheese and salt (add pepper, if you like) into mashed potatoes. Place mixture into buttered 2-quart casserole dish. Cover and bake about 30 minutes at 350 degrees.
