TOMATOES WITH PEPPERS & ZUCCHINI 
4 lg. tomatoes, peeled, seeded & chopped
2 sm. zucchini, cut into cubes
2 green peppers, seeded & chopped
3 onions, chopped
1/4 c. olive oil
1 whole egg, beaten
1 hard-boiled egg
Salt to taste

Heat the olive oil in a heavy skillet. Add the chopped onions, peppers, zucchini and salt. Stir well, then cover and reduce heat. Simmer for 30 minutes, stirring occasionally.

In a 2 quart saucepan bring the tomatoes to a boil. Stir and mash while cooking, uncovered until most of the liquid is absorbed and the tomatoes become thick. Then add the tomato mixture into the vegetables, add the beaten egg and stir well. Cook slowly for a minute, but do not let the mixture boil. Crumble the yolk and the hard-boiled egg and cut the white into strips. Use these as garnish for the dish.
