MEXICAN LASAGNA 
1 lb. ground beef
1 pkg. taco seasoning
1 can refried beans
5 flour tortillas
1 lg. carton cottage cheese
1 c. shredded Cheddar cheese
1/2 c. shredded lettuce, optional
1/2 c. chopped tomato, optional
1 c. water

Preheat oven to 375 degrees. Brown ground beef in skillet and drain. Add 1 cup water and package taco seasoning. Stir. Bring to boil then turn down to simmer. Add can refried beans and simmer 10 minutes. In 9 x 9 baking pan, arrange 5 half tortilla shells on bottom of pan after cutting them. Scoop half of meat and bean mixture and spread.

Next, carton of rinsed and drained cottage cheese. Then remaining 5 half tortilla shells and remaining meat and bean mixture on top. Bake at 375 degrees for 45 minutes. Remove from oven, sprinkle cheese on top, let cool to firm. May garnish with lettuce and tomato if so desired.
