BASIC SWEET YEAST DOUGH | |
1 tsp. salt 8 eggs, plus 4 yolks 3 c. evaporated milk 1 c. sugar 1 c. butter 4 pkgs. yeast 14 c. sifted flour Have eggs at room temperature or they will cool the dough too much. If you are going to start baking early in the morning, leave eggs at room temperature overnight. Heat milk to a warm temperature (105 to 155 degrees), adding salt, sugar, butter and yeast. Let set for 5 minutes. Beat eggs and add. Add flour 1 cup at a time. When the dough starts pulling away from the side of the bowl, roll into a ball. Put into a large container that has been liberally greased. Cover with waxed paper and let rise until double. Punch down and use in the type of pastry you wish to make. |
