BASIC SWEET YEAST DOUGH | |
2 c. scalded milk 2 tsp. salt 1-2 pkg. dry yeast 1/2 c. warm water 1/2 - 1 c. sugar 1/2 c. melted or soft butter or fat 2-4 eggs 8-10 c. flour Amount of flour will vary, depending on type of flour and number of eggs used. For richer dough use larger quantities. Scald milk, pour over salt and sugar in mixing bowl. Cool to lukewarm and soften yeast in water, add yeast to milk along with about 4 cups of flour to make a medium thick batter; beat thoroughly. Let stand until foamy, about 5 minutes. Add melted fat (not hot) egg and spices for a flavored bread. Beat well, add enough flour to make a soft dough, which can be handled easily. Turn onto lightly floured board; let stand while you clean the bowl and brush bowl lightly with shortening. Knead dough until smooth, about 8-10 minutes. Place in bowl, grease top and let rise until double in bulk. Punch down, let rise again, when double turn on board, let stand for 10 minutes. Shape into rolls, coffee cake, or bread. Place into lightly greased pan and let rise until double. Bake rolls in 375 degree oven. Coffee cake at 375 degrees for 10 minutes then finish baking at 350 degrees. Yields about 3 dozen. |
