BROILED LAMB CHOPS | |
1/4 c. Dijon mustard 1 tbsp. chopped parsley 1/2 tsp. lemon pepper 1 shallot, chopped 1 clove garlic, chopped 4 lamb shoulder chops, 1" thick, about 2 lbs. Tomato wedges & parsley sprigs for garnish Preheat broiler. In small bowl combine mustard, parsley, lemon pepper, shallot and garlic. Arrange chops on rack in broiler pan. Spread half the mustard mixture over the chops. Broil 5" to 6" from heat sauce 6 to 7 minutes or until browned. Turn chops, spread remaining mustard mixture evenly over chops. Broil 6 to 7 minutes or until browned. Garnish. Makes 4 servings. 413 calories per serving. |

I made the following substitutions: gourmet honey mustard (with whole mustard seeds), 1/4 cup chopped cilantro and basil (I wanted a more intense herb flavor which I think goes with lamb really well), 1 green onion instead of shallot, and I was too hungry to spend time making garnish :) . High broil, 7-1/2 minutes on the first side, 6 minutes on the second side. My meat was cooked medium-well, which is how I like it.
