CARROT CAKE WITH CREAM CHEESE ICING | |
CAKE: 2 c. flour 2 c. sugar 2 tsp. baking powder 2 tsp. cinnamon 1 tsp. baking soda 1 tsp. salt 1 1/4 c. oil 4 eggs, well beaten 3 c. grated carrots 2 tsp. butter flavoring ICING: 8 oz. cream cheese 1 stick butter 1 box powdered sugar 1 c. chopped pecans 2 tsp. vanilla Combine dry ingredients, add oil, well beaten eggs, grated carrots and butter flavor. Stir and mix well. Bake for 30 minutes at 350 degrees. Makes 1 (9-inch) 2 layer cake. Once cake is cool, then spread with icing for icing. In bowl gradually blend with mixer at high speed butter, sugar, and cream cheese. Then with spoon, stir in nuts and vanilla. |
