CARROT PUDDING 
2 c. grated carrots
2 sticks butter
1 c. dark brown sugar
2 eggs
1 tsp. baking soda
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. nutmeg
1 1/2 c. flour
2 tbsp. lemon juice
2 tbsp. grated lemon rind

Cream together butter and sugar. Add other ingredients, adding carrots last. Pour into round or square cake pan and bake in a 350 degree oven for 1 hour.
