BAKED MACARONI AND CHEESE
(SERVES 4)
 
1 1/2 qts. water
1 1/2 tsp. salt
3/4 c. elbow macaroni
1 c. grated Cheddar or chopped process cheese
1/2 c. buttered soft bread crumbs (2 tbsp. melted butter and 1 slice bread,
torn)
1 1/2 tbsp. butter
1 1/2 tbsp. flour
1/2 tsp. salt
1/8 tsp. pepper
1 1/4 c. milk

Preheat oven to 400 degrees. Bring water to a boil in medium-sized kettle; add 1 1/2 teaspoon salt. Add elbow macaroni; boil for 10 minutes. While macaroni is boiling, make white sauce using quantities above in right hand column.

Remove white sauce from heat; add grated cheese and stir until melted. Drain water from cooked macaroni. Keep macaroni covered if sauce is not finished. Stir macaroni and cheese sauce together and pour into a greased 1-quart casserole. Prepare bread crumbs and sprinkle evenly over the casserole. Bake at 400 degrees for 20 minutes.
