TOMATOES, CUCUMBERS AND ONIONS
VINAIGRETTE
 
1 1/2 lbs. tomatoes, about 3
2 cucumbers
1 red onion
2 tbsp. red-wine vinegar
6 tbsp. olive oil
1 tbsp. chopped fresh parsley
1 tbsp. chopped fresh basil
Salt and pepper

Cut tomatoes into thick slices and cucumber and onions into very thin slices. In small jar, shake together vinegar, 1 1/2 teaspoon salt and 1/4 teaspoon pepper until salt dissolves. Add oil and shake to combine. Arrange tomato, cucumber, and onion slices overlapping on a serving plate. Pour on vinaigrette and sprinkle with herbs.
