BEST EVER WAFFLES OR PANCAKES 
I've adjusted this recipe over time, tweaking it here and there until it's just right! You can add any one of a number of flavorings you might have or try one of the following: an 1/8 teaspoon of Fiori di Sicilia, a teaspoon of Amaretto, a few drops of orange or lemon oil or extract, or a 1/2 teaspoon of real vanilla.

You can make the batter ahead of time and store it in a sealed container in the refrigerator so that it will be ready for breakfast each morning. Or you can bake them in advance and freeze until needed. Frozen waffles can be reheated in your toaster oven at 375°F for about 15-20 minutes or microwaved about 35 seconds or til heated through.

1 3/4 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. fine corn meal (optional)
2 eggs, separated
5 tbsp. sugar
1 cup buttermilk, plain yogurt or sour cream
1 cup milk
6 tbsp. melted butter or shortening

Whisk together flour, baking powder, baking soda and salt.

Whip egg whites, set aside. Beat egg yolks with sugar and stir in milk. Beat in flour mixture. Add melted butter or shortening.

When thoroughly combined, fold in beaten egg whites.

If batter is too thin, add a tablespoon of flour; if batter is too thick, add a tablespoon of extra milk, adjusting the batter until it has the consistency of very heavy cream. The batter may thicken upon standing and may require adjustment again.

Serve dotted with butter, drizzled with maple syrup or topped with a spoonful of marmalade or fruit.

Variation: Once batter is on the griddle, add fruit such as blueberries, strawberries or bananas.

They won't be as fluffy the next day because the egg whites break down. But go ahead and use all the batter, and warm the pancakes in the microwave next day or pop em in the toaster for a little bit. Just as good.

I use this recipe all the time! I even use cream cheese in lieu of buttermilk, yogurt or sour cream. If out of butter, oil. These pancakes are just amazing...I usually serve with blueberry compote or strawberries with basalmic, lemon juice/zest and sugar! The best results is when adding some corn meal and sifting all your dry ingredients. Thank you for this keepsake!

So yummy, but lots of work and messy kitchen. We have a big family so we doubled the recipe, except didn't totally double the butter or the sugar since we like it with mashed banana. We used a cornmeal mix, which added a nice texture. but I think personally just plain cornmeal would have been too gritty. Also, we didn't know when to add the yogurt, so we added it when we combined the dry and wet ingredients, before we mixed in the egg whites. Then we added our mashed bananas and chocolate chips after putting the pancake batter on griddle. The whole family loved it, but it did take a little time. But my little girl helped, so that made it fun.

Liked this very much. I used a cup of whole wheat flour an 3/4 cup of white. This will be our go to recipe from now on. When we have the time. Family liked them.
