BEST EVER WAFFLES OR PANCAKES 
I've adjusted this recipe over time, tweaking it here and there until it's just right! You can add any one of a number of flavorings you might have or try one of the following: an 1/8 teaspoon of Fiori di Sicilia, a teaspoon of Amaretto, a few drops of orange or lemon oil or extract, or a 1/2 teaspoon of real vanilla.

You can make the batter ahead of time and store it in a sealed container in the refrigerator so that it will be ready for breakfast each morning. Or you can bake them in advance and freeze until needed. Frozen waffles can be reheated in your toaster oven at 375°F for about 15-20 minutes or microwaved about 35 seconds or til heated through.

1 3/4 cups flour
2 tsp. baking powder
1 tsp. baking soda
1/2 tsp. salt
2 tbsp. fine corn meal (optional)
2 eggs, separated
5 tbsp. sugar
1 cup buttermilk, plain yogurt or sour cream
1 cup milk
6 tbsp. melted butter or shortening

Whisk together flour, baking powder, baking soda and salt.

Whip egg whites, set aside. Beat egg yolks with sugar and stir in milk. Beat in flour mixture. Add melted butter or shortening.

When thoroughly combined, fold in beaten egg whites.

If batter is too thin, add a tablespoon of flour; if batter is too thick, add a tablespoon of extra milk, adjusting the batter until it has the consistency of very heavy cream. The batter may thicken upon standing and may require adjustment again.

Serve dotted with butter, drizzled with maple syrup or topped with a spoonful of marmalade or fruit.

Variation: Once batter is on the griddle, add fruit such as blueberries, strawberries or bananas.

We ran out of pancake/waffle mix a while ago and we have not had pancakes in a long time. I wanted pancakes really bad and my 2yr old son asks me each morning for them. I finally said to myself... "I can try making pancakes from scratch". I tried this recipe and they came out FANTASTIC! My husband said they are better than the box mix! No more buying boxed mix! Thanks!!

Really excellent recipe. I added a splash of vanilla and made my own buttermilk with a cup of milk and a tablespoon of white vinegar. I put them in the waffle iron and they turned out perfectly.

Made this on a whim for some family friends staying with us. Rave reviews all around, Toned down the sour cream a little bit because we had a younger kid that I was afraid wouldn't like the taste, She loved them and even asked for more after her initial two. Beautifully fluffy and delightful golden brown. Quick, Easy, and very good, Even converted a microwave pancake mom.

We did not have any box mix so I thought "I am going to TRY to make from scratch". I am so glad I did! We used the sour cream. We had to add 2 tbsp. more of flour to make the consistency but they were mouth watering AND so THICK! WOW! is all I can say!! My 6yr old and 2yr old LOVED THEM!!!!

This is a great recipe for pancakes or waffles. It is easy to make and you can add various adjustments to the recipe without changing the quality. My personal favorite is with French Vanilla yogurt however the boys like the Bananas & Cinnamon ones.

This morning when I woke up i didn't want any eggs or cereal so I decided to have pancakes. Well I had never made them from scratch, so I go look in the cook book my grandmother passed down to me. And found not one pancake recipe in it. So go to bing and search pancake recipe and find this one and made 14 pancakes for me and my mom. They were FANTASTIC! I'll use this recipe from now on when i want pancakes.
