CHOCOLATE CHIP MINT COOKIES 
I was experimenting with the mint extract and so a made a small batch and put 1/2 teaspoon and another 1/4 teaspoon in the mix with the morsels. I found that adding the mint after putting in the chocolate is really good if you can't find some mint ones for getting a more minty taste.

2 1/4 cups all-purpose flour
1 tsp. baking soda
1 tsp. salt
1 cup (2 sticks) softened butter
3/4 cup granulated sugar
3/4 cup packed brown sugar
1 tsp. vanilla extract
2 eggs
1 (12 oz pkg.) semi-sweet chocolate morsels (about 2 cups)
1/2 tsp. mint extract (at least)

Preheat oven to 375°F.

In small bowl, combine flour, baking soda and salt.

Beat butter, granulated sugar, brown sugar and vanilla in large mixing bowl until creamy. (Can add the mint here too - optional).

Add eggs, one at a time, beating well after each addition. Gradually beat in flour mixture and then morsels.

Add mint extract into the mix (if you already added then ignore this - this makes the morsels taste minty too). Drop by rounded tablespoon onto ungreased baking sheets.

Bake at 375°F for 9 to 11 minutes or until golden brown.

Cool on baking sheets for 2 minutes. Remove to wire racks to cool all the way.

Makes 5 dozen cookies.
