PUMPKIN CHOCOLATE CHIP COOKIES 
Our family loves these muffin-like cookies and they're always the first dessert to go at any holiday gathering!

1/2 cup (1 stick) butter
1 cup sugar
1 cup pumpkin
2 eggs
1 3/4 cups all-purpose flour
1/4 tsp. salt
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. ginger
3/4 tsp. nutmeg
1/4 tsp. cloves
1 tsp. vanilla
1 cup semi-sweet chocolate chips

Preheat oven to 375°F. Cream butter and sugar and add unbeaten eggs, beating well after each addition. Stir in pumpkin. Add dry ingredients and blend well. Stir in vanilla and chocolate chips. Using a one-inch cookie scoop, drop onto ungreased cookie sheet and bake at 375°F for 13 to 15 minutes.

Variations: Feel free to adjust spices to your family's tastes.. we add a little extra cinnamon and cloves, and double the chocolate chips! If you want to add 1 cup nuts, stir them in with the vanilla and chocolate chips.

Makes 36-40 cookies.
