1 1/2 c. finely chopped dried apples (4 oz.) 1 1/2 c. water 1/2 c. butter 2/3 c. sugar 2 eggs 2 c. all-purpose flour 1 tsp. baking soda 1/2 tsp. salt 1/2 tsp. apple pie spice 3/4 c. shredded Cheddar cheese (3 oz.) 1/2 c. chopped walnuts Place dried apples and the water in a saucepan. Cook apples according to package directions; drain, reserving 1/3 cup liquid. (If there are no directions, cook, covered, for 20-25 minutes or until tender.) Cream together butter and sugar until light and fluffy. Add eggs; beat well. Stir together the flour, baking soda, salt and apple pie spice; add to creamed mixture alternately with reserved apple liquid. Stir in the drained apples, cheese and walnuts. Turn into a greased 9 x 5 x 3 inch loaf pan. Bake in 350 degree oven for 55-60 minutes. Cool in pan 10 minutes. Remove from pan; cool thoroughly on rack. Makes 1 loaf. |
