BUTTER MINTS | |
1/3 c. light corn syrup 1/4 c. butter 1 tsp. peppermint extract 1/2 tsp. salt 1 lb. powdered sugar (4 3/4 c.) Red and green food coloring In mixing bowl, combine corn syrup, butter, extract, and salt. Mix well. Sift in sugar, stirring slowly to combine. Mix dough with hands until a smooth ball can be formed. If hands become sticky, lightly coat them with powdered sugar. On wax paper, divide dough equally. Add drop of red or green food coloring to each half. Knead dough until color is evenly distributed. Shape dough into small balls and set on wax paper. Flatten with tines of fork. Let air dry overnight. Place in covered tin. Will remain fresh for 1 month. Makes about 70 butter mints. |
