BAJA CALIFORNIA CHICKEN 
8 boned chicken breasts
Salt and pepper
2 cloves garlic, crushed
4 tbsp. olive oil
4 tbsp. tarragon vinegar
2/3 c. dry sherry

Sprinkle chicken with salt and pepper. Crush garlic into oil and vinegar in a skillet. Saute chicken pieces until golden brown, turning frequently. Remove, place in baking dish. Pour sherry over chicken and bake in 350 degree oven for 10 minutes. Yield: 8 servings.
